You Want Us to WHAT?!? OK.

How it started.

Another name for this blog could have been The Accidental Vegetarian as I’m still not quite sure what happened. One day I’m chowing down on thick pepper bacon in the morning and delicious Cajun wings in the evening and the next I’m searching Allrecipes for “easy vegetarian recipes with cauliflower.”

It was cataclysmic.

I do know it’s my wife’s faul … idea. Turns out I bitched one too many times about how big our pants are and how hard it is to touch my toes and pointed out she’s right there with me. Oops.

“Well, let’s be vegetarians then,” she said to my latest challenge.

“OK, sure,” I said, hoisted by my own petard.

That set off frantic searches — how much protein do we really need? And what about B12? And anyway, can any of this stuff actually taste good? But almost a full year later I’ve learned enough to not just survive but begin to imagine thriving.

I dropped a pants size, and that’s nice. I also have more energy, look better, and am generally happier. That’s nice, too. But I’m not ever going to be some kind of health guru. I just want to share what we’ve learned to be successful so far, as this journey has changed us in ways we didn’t expect.
